- Microwave - 700 watts
- 1/4 c. oil
- 1/4 c. lowfat milk
- 1 egg
- 1/2 c. mashed ripe banana (about 1)
- 1/2 c. packed brown sugar
- 3/4 c. flour
- 1/2 c. minced nuts
- 3/4 teaspoon baking pwdr
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 c. packed brown sugar
- 1/4 c. minced nuts
- 2 T flour
- 1/8 teaspoon cinnamon
- 1 T butter, softened

- In medium bowl put together oil, lowfat milk, egg, banana and sugar. Add in flour, nuts, baking pwdr, salt and baking soda. Stir only till flour is moistened. Pour into greased 8 or possibly 9 inch round dish. Prepare nut topping.Put together brown sugar, nuts, flour and cinnamon. Blend in butter and butter. Sprinkle on top of coffee cake. Cook on medium 8 to 9 min or possibly till toothpick inserted near center comes out clean.
- Let stand 10 min. Store, covered till ready to serve. Yield: 8 servings.
