- 2 Tbsp. margarine
- 1 1/4 c. brown rice uncooked
- 1/3 c. onion minced
- 1/4 c. green bell pepper minced
- 1 x clove garlic chopped
- 2 c. warm water
- 1 can canned tomatoes Mexican-style minced & undrained
- 1/2 tsp chili pwdr

- In a large saucepan, heat margarine and add in rice, onion, pepper and garlic. Cook, stirring over low heat till rice is brown; then add in remaining ingredients. Cover and cook over low heat till liquid is absorbed, about 35-40 min.
- NOTES : A tasty, high-fiber dish - modified from source recipe. I was looking for some way to make brown rice taste decent. This workedvery well! Next time I will try with less margarine.
