Great salad for parties accompanied by warm French or Italian bread chunks.

- 1/2 medium red onion, finely chopped
- 1 red bell pepper, chopped
- 1 cup halved grape tomatoes
- 1 small cucumber, seeded, chopped
- 1/2 cup feta or goat cheese crumbles
- 1/2 cup pitted kalamata olives, or Mediterranean olives
- Marinade:
- 1/4 cup extra virgin olive oil
- 2 tbs. red wine vinegar
- 1 tbs. fresh lemon juice
- 1 tbs. each chopped parsley, fresh oregano, and garlic - or, 1/2 tbs. dried
- salt and pepper to taste

- Toss the veggies with the marinade ingredients. Chill several hours.
- Best served room temp.
