- 2 lb skirt or possibly flank steak
- 2 c. water
- 3 quart beef broth
- 12 x jalapeno peppers, diced with seeds
- 3 1/2 c. minced New Mexican chiles
- 1 x habanero chile, seeded and diced
- 1 tsp salt
- 1/4 c. Mexican oregano
- 1 lrg onion, peeled and diced
- 1 Tbsp. garlic pwdr
- 3 slc Monterey Jack cheese, cut into strips

- Cook steak in a pressure cooker with water at 10 pounds pressure for 1 hour.
- Remove, shred, and keep hot.
- Place broth in a stock pot, add in jalapenos, chiles, salt, oregano, onion and garlic pwdr; bring to a boil. Reduce heat and simmer for 30 min.
- Place broth mix in bowls. Add in steak and 2 pcs of cheese to create a cross in the bowl. Serve with corn or possibly flour tortillas brushed with butter.
