- 1 baked pie shell
- 2 or possibly 3 lg. mangoes, depending upon size
- Cinnamon and honey, to taste
- Cornstarch
- 3 tbsp. apple juice
- 5 bananas, sliced
- Whipped cream

- Prepare the pie shell. Make sure your fruit is very ripe. The mangoes should be sweet and orange. (The Spiral currently uses Haitian mangoes.) Slice mangoes and cook with their own juice in a pot over medium heat. Add in a touch of cinnamon and honey, to taste. Add in sufficient cornstarch to thicken. Add in apple juice and blend well. (Other compatible fruit juice can be substituted for the apple juice.) The longer the mangoes are cooked the thicker the mix will be. Remove from heat and cold. Mix with sliced bananas in a separate bowl. Mix in baked pie shell. Refrigerateand serve topped with whipped cream. Makes 1 pie.
