- 2 tbsp. red wine vinegar
- 2 tbsp. strawberry jam
- 1/3 c. salad oil
- Lettuce
- Tomatoes
- 3/4 c. unsalted cashews
- Sliced black olives
- Celery
- 2 cans mandarin oranges

- In large bowl, mix lettuce, sliced tomatoes, cashews, liquid removed black olives, liquid removed oranges, sliced celery.
- In separate bowl, with wire whisk, blend vinegar and jam. Add in oil in thin stream, blending well. Add in dressing to salad right before serving. Mix well, coating all ingredients.
