- 2 c. macaroni
- 1 c. cheese, grated
- 1 Tbsp. parmesan cheese
- 2 Tbsp. butter
- 1/4 c. flour, plain
- 1 1/2 c. lowfat milk
- 1 x onions, medium
- 1 tsp garlic, crushed
- 1/10 tsp nutmeg salt, pepper
- 1 x egg yolks
- 1/4 c. cream

- Finely dice onion.
- Cook macaroni in boiling salted water till "al dente".
- Heat the butter in a saucepan and add in the flour, stirring with a wire whisk. Add in the lowfat milk, stirring rapidly with whisk. When blended and smooth, add in the onion, garlic, pepper and nutmeg. Simmer gently for 5 min stirring the bottom regularly to ensure it doesn't burn.
- Add in cooked macaroni and bring to boil.
- Remove from heat and whisk in combined egg yolk and cream. Sauce should be thick and creamy.
- Serve sprinkled with extra cheese and paprika.
