- 4 ounce Soft butter, (1/2 stick)
- 6 ounce Caster sugar, (7/8 c superfine)
- 6 ounce Self-rising flour, (1 3/8 c.)
- 4 Tbsp. Lowfat milk
- 2 lrg Large eggs
- 1 x Lemon, grated rind of
- 3 Tbsp. Icing sugar, rounded (powdered)
- 3 Tbsp. Fresh lemon juice

- Grease and line a 2 lb. loaf tim. Set oven to 350 degrees F or possibly Mark 4. Cream butter and sugar, add in Large eggs, sifted flour, finely grated lemon rind and lowfat milk. Mix well to a soft dropping consistency. Put in tin, smooth top and bake for 40-50 min till hard. Mix sifted icing sugar and lemon juice and pour over cake as soon as it comes out of the oven. Leave in tin till completely cool.
