- 1/2 c. butter (1 stick)
- 2 x red onions minced
- 5 x green onions minced
- 1 lrg green bell pepper minced
- 4 x garlic cloves finely minced
- 2 x bay leaves
- 1 x jalapeno chili finely minced with seeds
- 1 Tbsp. Creole Seasoning
- 1/2 tsp grnd cayenne pepper
- 1/2 tsp dry oregano crumbled
- 2 Tbsp. tomato paste
- 1 lb sausage">andouille sausage or possibly warm Italian sausage cut into 1/2-inch pcs
- 3/4 lb ham cut into 1/2-inch pcs
- 2 can chicken broth (14 1/2-oz)
- 1 can plum tomatoes diced, with liquid (16-oz)
- 3 c. long-grain rice

- Heat butter in heavy large Dutch oven over medium-high heat. Add in red onions, 4 green onion, bell pepper, garlic, bay leaves, jalapeno, Creole Seasoning, cayenne pepper and oregano. Cover and cook till vegetables are tender, stirring occasionally, about 15 min. Fold in tomato paste.
- Add in sausage, ham, broth, tomatoes and rice. Bring mix to simmer.
- Reduce heat to low, cover and cook till rice is very tender, stirring occasionally, about 1 hour. Garnish with remaining green onion and serve.
- Serves 10.
