- 3 Tbsp. oil
- 1 x onion chopped
- 2 Tbsp. chopped green bell pepper
- 1 x celery stalk minced
- 1 x garlic clove chopped
- 1 can minced tomatoes - (28 ounce)
- 1 can tomato puree - (28 ounce)
- 1 Tbsp. basil
- 1 tsp crushed oregano
- 1 x bay leaf
- 1/2 c. dry red wine
- 1 c. water
- 2 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 2 Tbsp. grated Parmesan cheese

- Heat the oil over medium heat in a large, heavy pot. Add in the onion, bell pepper, celery and garlic and cook till the vegetables are tender, 8 to 10 min. Add in the tomatoes, tomato puree, basil, oregano and bay leaf. Simmer the sauce 1 hour, stirring frequently.
- Add in the red wine, water, salt and pepper. Simmer 1 hour longer. If the sauce is too thick, add in more water. Stir in the cheese just before serving.
- This recipe yields 12 servings.
