,%20and%20March%20brings%20with%20it%20a%20very%20fun,%20and%20very%20green%20celebration%20--St.%20Paddy's%20day!%20I'm%20not%20Irish%20(100%25%20Dutch),%20but%20that%20doesn't%20mean%20I%20don't%20wish%20for%20a%20little%20luck%20of%20the%20Irish.%20This%20year,%20I've%20joined%20a%20fabulous%20group%20of%20bloggers%20to%20help%20bring%20one%20lucky%20reader%20some%20of%20that%20luck%20in%20the%20form%20of%20a%20great%20giveaway.%20I'll%20explain%20more%20in%20just%20a%20bit...first%20let%20me%20show%20this%20year's%20rendition%20of%20my%20ode%20to%20green%20edibles.%3C/p%3E%3Cp%3EMy%20latest%20obsession%20is%20candied%20citrus%20peel.%20Seriously.%20It%20started%20with%20a%20little%20grapefruit%20peel%20experimentation.%20I%20happen%20to%20dislike%20grapefruit%20with%20a%20passion.%20Bitter%20and%20awful.%20But%20the%20peel?%20Simmered%20in%20juice%20and%20sugar%20until%20it's%20syrupy%20and%20then%20rolled%20in%20more%20sugar....holy%20yum!%20From%20there%20I%20went%20to%20orange,%20then%20lemon,%20and%20now...you%20guessed%20it....I%20needed%20something%20green,%20so%20candied%20lime%20peel%20was%20on%20the%20agenda.%3C/p%3E%3Cp%3EThe%20key%20to%20keeping%20the%20bitterness%20at%20bay%20is%20to%20carefully%20avoid%20the%20pith.%3C/p%3E%3Cp%3ENow,%20I've%20always%20been%20more%20of%20a%20chocolate%20lover%20than%20a%20citrus%20lover.%20It%20seems%20that%20people%20are%20usually%20divided%20between%20the%20two%20camps%20when%20it%20comes%20to%20dessert.%20Then,%20I%20combined%20the%20two.%20Oh%20my!%20Dark%20chocolate%20and%20orange%20is%20a%20given...a%20simply%20fabulous%20and%20classic%20combination.%20But%20dark%20chocolate%20and%20lime?%20The%20best!%3C/p%3E%3Cp%3EI%20decided%20on%20a%20dark%20chocolate%20bark,%20mostly%20because%20of%20how%20easy%20it%20is.%20The%20candied%20lime%20is%20the%20star,%20of%20course,%20but%20I%20decided%20to%20add%20some%20pistachio%20and%20some%20roasted%20coconut.%20The%20resulting%20candy%20isn't%20as%20%22green%22%20as%20I%20had%20hoped,%20but%20flavor%20is%20just%20so%20worth%20it.%3C/p%3E%3Cp%3ELime,%20Coconut,%20and%20Pistachio%20Dark%20Chocolate%20Bark%3C/p%3E%3Cp%3EBits%20of%20candied%20lime%20peel%20give%20this%20chocolate%20bark%20little%20bursts%20flavor.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3ELine%20a%20cookie%20sheet%20with%20parchment%20paper%20and%20set%20aside.%3C/p%3E%3Cp%3EUse%20a%20vegetable%20peeler%20to%20shave%20thin%20slices%20of%20peel%20from%20the%20limes,%20taking%20care%20to%20avoid%20the%20white%20pith.%20Julienne%20the%20shaved%20peels%20into%201/8%22%20strips.%3C/p%3E%3Cp%3EJuice%20the%20limes%20and%20add%20enough%20water%20to%20make%203/4%20cup.%20Combine%20the%20juice%20and%201/2%20cup%20sugar%20in%20a%20small%20non-reactive%20saucepan.%20Stir%20in%20the%20peel.%20Heat%20over%20medium%20heat%20until%20the%20mixture%20just%20comes%20to%20a%20simmer.%20Reduce%20the%20heat%20to%20medium-low%20and%20continue%20to%20simmer%20for%2030-40%20minutes,%20stirring%20occasionally,%20until%20the%20mixture%20is%20syrupy%20and%20the%20peels%20are%20translucent.%3C/p%3E%3Cp%3EDrain%20the%20peels,%20reserving%20the%20syrup%20for%20another%20use,%20if%20desired.%20Toss%20the%20peels%20with%201/4%20cup%20sugar,%20then%20transfer%20them%20to%20a%20sheet%20of%20parchment%20paper;%20spread%20out%20and%20allow%20to%20dry%20for%20at%20least%2030%20minutes.%3C/p%3E%3Cp%3EBring%201-inch%20of%20water%20in%20a%20medium-sized%20pot%20to%20a%20simmer%20over%20medium%20heat.%20Lower%20the%20heat%20to%20medium-low.%20Place%20the%20chocolate%20chips%20in%20a%20heat-proof%20bowl%20and%20place%20the%20bowl%20over%20the%20simmering%20water,%20making%20sure%20that%20the%20bowl%20isn%E2%80%99t%20touching%20the%20water.%20Stir%20the%20chips%20until%20completely%20melted%20and%20smooth.%20With%20an%20offset%20spatula,%20spread%20the%20chocolate%20evenly%20on%20the%20prepared%20parchment%20lined%20cookie%20sheet%20to%20a%201/4%20%E2%80%93inch%20thickness.%20Sprinkle%20the%20candied%20lime%20peels,%20the%20coconut%20chips,%20and%20the%20pistachio%20nuts%20evenly%20over%20the%20chocolate.%20Refrigerate%20for%20at%20least%20one%20hour.%20Break%20into%20pieces.%20Store%20covered%20in%20a%20cool%20area,%20or%20refrigerate.%3C/p%3E%3Cp%3ETags:%20dark%20chocolate,%20candied%20lime,%20pistachios,%20roasted%20coconut,%20candy,%20St.%20Patrick's%20Day,%20green%3C/p%3E%3Cp%3Ea%20Rafflecopter%20giveaway%3C/p%3E){kind=link}
