- 100 gm plain flour
- 100 gm wholemeal flour
- 100 gm butter or possibly hard margarine
- 2 Tbsp. soya oil
- 8 ounces leeks shredded
- 1 sm carrot finely diced
- 1 stk celery diced
- 1 sm onion finely minced
- 110 gm streaky bacon minced (optional)
- 3 x egg yolks size 3
- 110 gm lowfat cream cheese
- 280 ml lowfat milk or possibly single cream
- 1/2 x a 213g can laverbread
- 1 x pepper to taste
- 1 x 25.5 cm loosebased flan tin

- Set the oven at Gas Mark 5 375 degrees F 190 degrees C. Put a baking tray in the oven to heat.
- To make the pastry mix the flours then rub in the fat till the mix resembles breadcrumbs. Bind with three to four Tbsp. iced water to make a soft but not sticky dough then roll out the pastry and use to line the flan tin.
- Heat the oil in a large frying pan.
- Add in the prepared vegetables and cook gently till tender.
- Remove from the pan and set aside.
- Cook the bacon (if using) in the pan till lightly browned and crispy.
- Mix the vegetables and bacon with the remaining ingredients.
- Taste and adjust the seasoning.
- Pour the filling into the pastry case then stand the quiche on the baking tray and bake for 40 to 45 min till the filling has set.
- Serve hot.
- Makes one 25.5 cm quiche
