- 1 pound grapes
- 1 c. rum
- 1/2 pound grated coconut
- 3 lbs. boiled sweet potatoes
- 3 c. water
- 1 teaspoon butter
- 1 T oil
- 3 large eggs
- Healthy pinch of salt
- Vanilla, cinnamon, and nutmeg to taste

- Soak the grapes in the rum. Bring 3 cups of water to boiling, and then turn the heat off. Place the coconut in the water, and then cover. After about 1/2 hour, drain off the coconut lowfat milk and put aside.Boil the sweet potatoes, and then mash them thoroughly. Add in the coconut to the mashed sweet potatoes. Then add in the butter, oil, vanilla, cinnamon, nutmeg, salt, and large eggs. Mix well. Add in the grapes and rum, and mix thoroughly.
- Pour the mix into a buttered pan, and place in a medium high oven (375 degrees) for about 45 min to 1 hour.
