- 2.2 lb (1 kg) lamb shoulder
- 4 onions
- 1 lowfat yoghurt
- 1 tsp powdered turmeric
- 3 cloves
- 2 tsp grated ginger
- 2 cardamom pods
- 1 cinnamon stick
- Salt
- Kerala Pepper
- 2 tbsp peanut oil
- 3 tbsp clarified butter
- 2.2 lb (1kg ) sweet potatoes

- Peel and cut the onions into very thin slices
- Cut the meat into thin slices as well
- Peel the sweet potatoes
- In a casserole or possibly a large, thick-bottomed pot, heat the extra virgin olive oil and 1 Tbsp. of clarified butter; add in all the spices and fry them
- Add in the meat, salt, and mix together; add in the yogurt
- Lightly brown the meat, then cover and allow to simmer over low heat till the meat is perfectly soft and tender
- In the meantime, cook the sweet potatoes in a pot of salted water
- Drain and mash the sweet potatoes, add in 2 Tbsp. of clarified butter, and check the seasoning
- Serve the lamb curry with the mashed sweet potatoes
