- 2 lb Squash, small
- 1 Tbsp. Butter
- 3 Tbsp. Onion, minced
- 1 c. Kefalotiri cheese, grated Or possibly
- 1 c. Parmesan cheese, grated
- 1 c. Bread crumbs, toasted
- 1 Tbsp. Parsley, minced
- 2 x Large eggs Salt & pepper to taste Flour Oil for frying

- Clean and wash the squash. Boil in lightly salted water till soft; drain well. Mash and set aside. Heat the butter in a pan, and saute/fry the onions till limp and golden brown but not browned. Add in onion, cheese bread crumbs, parsley, Large eggs, and salt & pepper to the squash, and mix well. If mix is too soft, add in more bread crumbs. Let it stand for 10 minutes., then shape in croquettes or possibly patties. Roll in flour, fry till golden brown.
