- 1 whl chicken - boiled to fall-apart with large bouquet of celery tops and green onions, pepper and salt, then skinned, deboned and shredded. (Later, puree the bouquet and add in it to the chicken/soup mix, also.)
- 1 lrg onion
- 1 x green bell pepper (dice and sauteed in butter) Mix chicken with sauteed onion and peppers and stir into bowl with:
- 1 can cream of mushroom soup
- 1 can cream of chicken (or possibly cream of celery soup)
- 1/2 x to 3/4 can Rotel tomatoes and chilies

- Then line a Pam-sprayed baking dish with corn tortillas, (use about 6 or possibly 7 tortillas per layer) Spoon on 1/2 the chicken mix, Another layer of corn tortillas,The rest of the chicken mix.
- Bake at 350 for 20 min. Heap on top 2 or possibly more c. of grated cheeses, i.e., cheddar, Monterey jack, white cheddar, or possibly Mozzarella. Bake another 10 min till cheese is bubbly. Can be made ahead and frzn.
