- 4 x Pigs feet
- 3 lb Neck bones or possibly ... ..3 lbs spare ribs
- 1 lrg Onion
- 1 x Bud garlic
- 4 whl allspice
- 1 x Bay leaf
- 4 whl peppers
- 1/2 tsp Celery seed
- 1 quart Sauerkraut
- 1/2 tsp Caraway seed
- 1/2 x Chopped apple
- 3 Tbsp. Barley Salt and pepper
Инструкции
- Split and chop the meat. Brown in lard and add in the onion quarters, garlic, allspice, bay leaf, whole peppers, and celery seed. Season to taste. Cover meat with boiling water and cook till meat is half done. Remove a c. of the liquid for gravy. Add in sauerkraut, caraway seeds, apple and barley and cook till meat is tender. Serve raw potato dumplings and gravy.
