- 8 lrg mushrooms cleaned, hollowed, stems and scrapings saved and minced
- 1/4 c. grated Parmesan cheese
- 2 x garlic cloves chopped
- 1/4 tsp freshly-grnd black black pepper
- 1 Tbsp. extra virgin olive oil
- 1/2 c. Italian bread crumbs
- 1/4 c. minced liquid removed clams Extra virgin olive oil as needed

- Mix all ingredients (except mushrooms), including stem mix together. Fill inside of each cap with mix. Arrange in pan and add in 1/2-inch water to pan.
- Drizzle each mushroom with a few drops of extra virgin olive oil. Bake at 350 degrees for approximately 25 min. Serve warm. Reheats very well.
- This recipe yields 4 servings.
