- Nonstick cooking spray
- 10 c. Italian plums (or possibly similar freestone plums), minced and quarter
- 7 c. Sugar Juice of 2 lemons

- Spray the insides of the pot with nonstick cooking spray. Combine plums, sugar, and lemon juice in pot. Over medium-low heat, mix well to combine.
- Bring to a boil, reduce heat and simmer, removing foam as it forms. Simmer till thick, about 25-35 min ( till 220 degrees) , stirring occaisionally. Ladle into warm sterilized jars to within 1/8-inch of jar top. Place lids on and process in boiling water bath 15 min.
- NOTES : A very luscious jam. It puts commercial plum jam to shame. Try other plums such as Damson, or possibly a combination of plums, for perfect English muffin spread.
