- 2 tablespoons olive oil
- 3 lb. beef chuck pot roast
- 1/2 lb. pancetta or bacon, chopped into 1/2-inch pieces
- 3 stalks celery, thinly sliced
- 3 carrots, peeled and sliced
- 3 cloves garlic, smashed, peels removed
- 1 large onion, chopped
- 2 cups crimini mushrooms, sliced
- salt and pepper
- 2 bay leaves
- 1 tablespoon fresh rosemary, chopped
- 8 sprigs fresh thyme
- 1 teaspoon fresh oregano
- 1 can (6 oz.) tomato paste
- 2 1/2 cup red wine or alcohol free wine
- 1 can (10.5 oz.) beef consomme
- 1 can (28 oz.) diced tomatoes
- 1 box (16 oz.) Orzo, cooked, according to package directions

%20and%20Sandra%20Bullock%20win%20her%20golden%20statue%20(compared%20to%20Meryl%20Streep%20she's%20like%20a%20hot-dog%20at%20a%20banquet%20-%20but%20I%20love%20hot-dogs!)%20was%20the%20Italian%20beef%20stew.%20%20Is%20that%20wrong?%3C/p%3E%3Cp%3ENormally%20I%20make%20Oscar%20Gumbo%20for%20our%20Oscar%20night%20festivities...but%20this%20year,%20in%20honor%20of%20Meryl%20being%20nominated%20for%20Julie%20and%20Julia,%20I%20decided%20to%20make%20Beef%20Bourguignon...however,%20finding%20myself%20surrounded%20by%20guide%20books%20of%20Italy,%20I%20switched%20gears%20and%20herbs%20and%20opted%20for%20Stracotto%20di%20Manzo...Italian%20Beef%20Stew...which,%20in%20my%20humble%20opinion,%20was%20every%20bit%20as%20deserving%20of%20an%20Oscar%20as%20Meryl.%3C/p%3E%3Cp%3EThis%20dish%20is%20very%20much%20like%20Beef%20Bourguignon...it's%20slow-cooked%20with%20vegetables%20in%20wine%20(I%20used%20alcohol%20free%20wine,%20Fre,%20produced%20in%20Napa%20Valley%20by%20the%20Sutter%20Home%20Winery,%20which%20is%20quite%20good,%20has%20all%20the%20properties%20of%20real%20wine%20so%20the%20taste%20and%20health%20benefits%20are%20there,%20as%20well%20as%20the%20marinating%20magic).%20%20The%20main%20difference%20between%20this%20dish%20and%20Beef%20Bourguignon%20would%20be%20the%20flavors,%20due%20to%20Italian%20herbs,%20and%20it's%20served%20over%20Orzo%20instead%20of%20egg%20noodles...but%20you%20could%20use%20noodles,%20rice,%20potatoes%20or%20another%20pasta.%3C/p%3E%3Cp%3EThe%20mister%20has%20a%20business%20friend%20who%20told%20a%20story%20about%20how%20much%20his%20friends%20in%20India%20liked%20his%20jokes...they%20said%20he%20was%20mind-BLASTING...he%20corrected%20them%20and%20said%20they%20meant%20mind-BLOWING%20but%20they%20responded%20with,%20no,%20no,%20no,%20you%20are%20better%20than%20that,%20you%20are%20mind-BLASTING!%20%20And%20so,%20my%20friends,%20is%20this%20dish.%20%20Mind-blasting,%20rich,%20hearty,%20comfort%20food...meat%20so%20tender%20you%20don't%20need%20a%20knife...vegetables%20swimming%20in%20a%20gravy%20so%20aromatic%20you'll%20want%20to%20wear%20it%20as%20perfume%20and%20need%20I%20remind%20you%20that%20Sophia%20Loren%20was%20raised%20on%20this%20kind%20of%20food...and%20look%20at%20what%20it%20did%20for%20her!%20%20Make%20this%20one%20kids...it's%20a%205-danger%20for%20sure.%3C/p%3E%3Cp%3EIn%20a%20large%20Dutch%20oven%20or%20oven-proof%20pot,%20heat%20olive%20oil%20until%20hot%20over%20medium-high%20heat.%20%20Season%20both%20sides%20of%20pot%20roast%20with%20salt%20and%20pepper%20and%20add%20to%20pot,%20allowing%20to%20brown%20on%20both%20sides,%20about%2010%20minutes%20total.%20%20Transfer%20roast%20to%20a%20plate.%20%20Add%20pancetta%20or%20bacon%20to%20the%20pot%20and%20cook%20for%205%20minutes,%20stirring%20occasionally.%20%20Add%20in%20celery,%20carrots,%20onion,%20garlic%20and%20mushrooms,%20and%20cook%20until%20softened,%20about%208%20minutes.%20%20Taste%20for%20seasonings,%20add%20more%20salt%20and%20pepper%20if%20needed.%20%20Add%20in%20bay%20leaves,%20rosemary,%20thyme%20and%20oregano.%20%20Stir%20to%20blend.%20%20Add%20in%20tomato%20paste,%20wine,%20beef%20consomme%20and%20diced%20tomatoes.%20%20Stir%20to%20blend.%20%20Add%20meat%20back%20to%20pot,%20push%20down%20to%20submerge.%20%20Cover%20pot%20with%20lid%20and%20put%20in%20a%20350%20degree%20oven%20for%203%201/2%20hours.%3C/p%3E%3Cp%3ECook%20Orzo%20according%20to%20package%20directions%20and%20set%20aside.%3C/p%3E%3Cp%3EWhen%20roast%20is%20done,%20remove%20from%20oven%20and%20using%20a%20spoon,%20skim%20off%20as%20much%20fat%20from%20the%20surface%20as%20you%20can.%20%20%20To%20serve,%20add%20Orzo%20to%20a%20bowl%20and%20top%20with%20beef,%20vegetables%20and%20gravy.%20%20Serves%206.%3C/p%3E%3Cp%3E%22The%20only%20way%20to%20keep%20your%20health%20is%20to%20eat%20what%20you%20don't%20want,%20drink%20what%20you%20don't%20like,%20and%20do%20what%20you'd%20rather%20not.%22%20~%20Mark%20Twain%3C/p%3E%3Cp%3EOne%20year%20ago:%20%20It%20Was%20A%20Huge%20Success!%3C/p%3E%3Cp%3ETwo%20years%20ago:%20%20Cupcake%20Fillings%3C/p%3E){kind=link}
