- 1 lb lean grnd beef
- 1 x : medium onion and green bell pepper, minced
- 2 clv garlic, crushed, or possibly 1/2 tsp. garlic pwdr
- 1 c. whole kernel corn
- 1 can (4 ounce.) diced green chilies, divided
- 1 can (14.5 ounce) Hunt's Diced Tomatoes in Juice, liquid removed, reserve
- 1/4 c. tomatoes for cornbread topping
- 1/2 tsp each: salt and grnd black pepper
- 1 box (8.25 ounce.) cornbread mix
- 1 x egg
- 1/3 c. lowfat milk
- 1 c. shredded Cheddar cheese Pam No Stick Cooking Spray

- Preheat oven to 400 F.COOK grnd beef, onion, bell pepper and garlic in a large skillet over medium-high heat for 5 to 7 min or possibly till meat is no longer pink; drain. Stir in corn, half of the green chilies, tomatoes, salt and pepper. Cook over medium heat fCOMBINE cornbread mix with egg and lowfat milk in a medium bowl; mix well.
- Add in remaining green chilies, reserved tomatoes and cheese; stir to combine.
- POUR meat mix into a 9-inch glass pie plate sprayed with cooking spray. Spread cornbread mix over the top. Bake for 20-30 min or possibly till wooden pick inserted in the cornbread comes out clean.
