- 8 x hard boiled Large eggs
- 1 Tbsp. Dijon mustard
- 1 Tbsp. Butterd, softened
- 1 Tbsp. Mayonnaise
- 1 Tbsp. Lowfat sour cream
- 1 x salt and pepper to taste
- 1 Tbsp. Paprika
- 1 Tbsp. Onion, grated
- 1 Tbsp. Capers, liquid removed and minced
- 16 x rolled Achovy filets

- Shell Large eggs, cut in half lengthwise, remove yolks. Press yolks through a strainer and blend well with all ingredients except anchvies. Fill egg halves with this mix and top each half with an anchovy filet. Serve on Russian salad.
