,%20and%20very%20ripe%20bananas.%20Yes,%20oil%20and%20eggs%20were%20found%20in%20every%20heirloom%20recipe%20that%20I%20found.%20%20Cook's%20Country%20said%20%22...Reducing%20the%20oil%20was%20the%20first%20logical%20step,%20and%20tweaking%20the%20leavener%3C/p%3E%3Cp%3Eof%20fruit,%20boiling%20down%20the%20juices%20to%20concentrate%20flavor%20and%20prevent%3C/p%3E%3Cp%3Eleaden%20layers.%22%3C/p%3E%3Cp%3EThe%20first%20thing%20I%20noticed,%20is%20that%20I%20didn't%20need%20a%20cake%20mixer.%20Sweet!%20So,%20I%20began%20by%20draining%20a%20can%20of%20pineapple%20and%20reducing%20the%20syrup%20to%20about%201/3%20cup.%3C/p%3E%3Cp%3EThe%20dry%20ingredients%20were%20sifted,%20the%20pecans%20toasted...%3C/p%3E%3Cp%3EI%20like%20to%20use%20my%20potato%20ricer%20to%20mash%20bananas.%20Nifty,%20eh?%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20I've%20whisked%20the%20eggs,%20added%20the%20oil,%20%20and%20vanilla.%20In%20goes%20the%20pineapple.%20banana%20and%20pecans,%20and%20the%20reduced%20pineapple%20syrup.%20Last,%20the%20dry%20ingredients%20are%20stirred%20until%20combined.%3C/p%3E%3Cp%3EThe%20batter%20was%20evenly%20divided%20into%20two%20parchment%20lined%209-inch%20cake%20pans.%20The%20baking%20time%20was%20listed%20as%2050-55%20minutes,%20but%20mine%20was%20ready%20at%20the%2045%20minute%20mark.%3C/p%3E%3Cp%3EOh,%20yeah.%20The%20frosting!%3C/p%3E%3Cp%3ECream%20cheese.%20Definitely.%20I%20can't%20imagine%20using%20any%20other%20type%20of%20frosting%20with%20this%20cake.%20%20No%20matter%20how%20much%20cheaper%20%22generic%20brands%22%20are--%20I'm%20sticking%20with%20Philadelphia%20Cream%20Cheese.%20The%20best.%3C/p%3E%3Cp%3EThe%20frosting%20recipes%20lists%2020%20ounces%20of%20unsalted%20butter%20and%2020%20ounces%20of%20cream%20cheese.%20Whoa!%20I%20stuck%20to%20two%20sticks%20of%20butter%20and%20two%20packages%20of%20cream%20cheese.%20That's%20still%20a%20lot...%3C/p%3E%3Cp%3E...and%20I%20used%20four%20cups%20of%20confectioners%20sugar,%20instead%20of%20five.%20Once%20the%20butter,%20powdered%20sugar%20and%20vanilla%20are%20creamed%20together,%20the%20cream%20cheese%20is%20slowly%20added.%3C/p%3E%3Cp%3EDay-um!%20%20That's%20a%20lot%20of%20frosting--%20and%20I%20might%20add--%20it's%20so%20good!%20I%20have%20to%20wait%20at%20least%20two%20hours%20before%20frosting%20the%20cake.%20Tick,%20tock,%20tick,%20tock...%3C/p%3E%3Cp%3EI%20love%20frosting,%20but%20I%20won't%20lie--%20I%20had%20almost%20two%20cups%20of%20leftover%20frosting.%20%20It%20didn't%20go%20to%20waste.%20It's%20in%20the%20freezer,%20and%20I'll%20use%20it%20for%20cupcakes,%20in%20the%20future.%20%20Waiting%20an%20hour%20for%20the%20frosting%20to%20set%20was%20torture,%20because%20the%20cinnamon%20aroma%20got%20my%20taste%20buds%20going!%3C/p%3E%3Cp%3EYep,%20there's%20a%20LOT%20of%20frosting%20on%20top!%3C/p%3E%3Cp%3ESo,%20now,%20I%20get%20to%20taste%20the%20cake...%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20The%20cake--%20very%20moist.%20Definitely.%20It%20doesn't%20taste%20like%20oil,%20thank%20goodness.%20Yes,%20the%20banana%20taste%20is%20there,%20but%20the%20pineapple%20marries%20well%20with%20it.%20I%20love%20pecans,%20so%20I'm%20glad%20I%20went%20with%20that.%20The%20frosting%20is%20very%20sweet,%20indeed.%20%20%20I%20do%20like%20carrot%20cake,%20and%20this%20is%20very%20similar.%20Obviously,%20no%20carrots.%20My%20son%20wasn't%20too%20excited%20about%20a%20cake%20with%20bananas%20and%20pineapple.%20That%20is,%20until%20he%20could%20smell%20the%20aroma%20while%20it%20was%20baking.%20I%20saved%20him%20a%20slice%20for%20when%20he%20got%20home%20from%20work.%20He%20liked%20it!%20%20My%20husband,%20who%20is%20super%20finicky,%20loved%20this%20cake.%20%20I%20quickly%20sliced%20up%20the%20cake%20and%20gave%20it%20away.%20It's%20gone,%20thank%20goodness.%20%20White%20cake%20still%20holds%20the%20%231%20spot%20in%20my%20heart,%20as%20cakes.%20But%20Humming%20Cake%20has%20earned%20my%20respect.%20It's%20a%20delicious%20ode%20to%20ripe%20bananas.%3C/p%3E){kind=link}
