Рецепт HOT SHRIMP CURRY WITH COCONUT AND CASHEWNUTS
This is a simple delicious curry recipe that is famous along India's coastal or bay areas.It is considered a festive recipe too in some parts of the country which is made during special occasions.Coconut gives the creamy texture and the cashew nuts provide the crunch to the whole dish.

- 2 tbsp-oil
- 1 bay leaf, crumbled
- 2 Cloves garlic, crushed
- 2/3 cups grated unsweetened Coconut
- 1/2 cup broken cashewnuts,roasted
- 1/4 cup Lemon juice
- 1.5 tsp-salt
- 1 cup water
- 2 pounds raw shrimp, shelled and deveined
- 1 medium onion, finely chopped
- 1 tbsp-ground coriander
- 1 tsp-cumin
- 1.5 tsps-cayenne pepper
- 1/2 tsp-mustard seeds, crushed
- 1/2 tsp-black pepper, crushed

- Heat oil and fry onion, coriander, cumin, cayenne pepper, mustard seeds, black pepper, bay leaf and garlic for 2 to 3 minutes,put in coconut and fry another minute or two.Remove and transfer this onto a different bowl.
- In the same pan add and roast cashew nuts till lightly golden.Remove 2 tsp of this and save for garnishing.Add the already roasted onion, coriander, cumin, cayenne pepper, mustard seeds, black pepper, bay leaf and garlic,coconut and cashewnuts.
- Add lemon juice, salt and water
- Simmer for 10 minutes
- Add shrimp and cook until done.
- Garnish the dish by sprinkling the saved roasted cashew nuts.
- Serve with steaming white rice and some fried crackers on the side.
