- 1 lb salmon fillets or possibly steaks - (to 1 1/2 lbs) skinned, and bones removed
- 1/2 c. vegetable oil Juice of one large lime
- 2 tsp grated lime zest
- 2 Tbsp. honey
- 2 Tbsp. minced fresh cilantro
- 1 Tbsp. fresh grated ginger
- 1/2 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 1 x red bell pepper cut 1 1/2" squares
- 1 x green bell pepper cut 1 1/2" squares
- 12 lrg mushrooms
- 1 med onion cut 1 1/2" chunks
- 1 x zucchini cut 1/2" slices

- Cut salmon into 1 1/2-inch squares. Blend together oil, lime juice, lime zest, honey, cilantro, ginger, salt and pepper.
- Divide marinade, reserving 1/4 c. for basting. Marinate salmon cubes in remaining mix for 1 hour, turning occasionally.
- Skewer salmon and vegetables alternately on heat-proof skewers. Grill on oiled, heated grill, about 5 min per side, basting with reserved marinade. Don't overcook.
- This recipe yields 4 to 6 servings.
