.%20I%E2%80%99ve%20had%20time%20to%20deal%20with%20the%20tragedy%20over%20the%20past%20month,%20but%20as%20butter%20is%20the%20main%20ingredient%20in%20cookies%2099.9%25%20of%20the%20time,%20I%20cant%20even%20make%20my%20usual%20mountain%20of%20treats!%20Maybe%20that%E2%80%99s%20at%20the%20root%20of%20my%20bah%20humbug?%3C/p%3E%3Cp%3EWho%20knows.%20But%20I%20do%20know%20I%20need%20to%20get%20into%20the%20Christmas%20spirt,%20and%20about%20five%20minutes%20ago.%20To%20find%20the%20spirit%20of%20Christmas%20past,%20I%20had%20to%20go%20basic.%20Feelings%20of%20warmth,%20love%20and%20chocolate.%20With%20a%20seasonal%20flavor%20thrown%20in%20for%20good%20measure.%3C/p%3E%3Cp%3ESanta%20Claus%20wrote%20me%20a%20prescription%20and%20it%E2%80%99s%20for%20homemade%20peppermint%20marshmallows,%20folks!%20I%20can%20feel%20the%20Christmas%20creeping%20back%20in%20to%20my%20grinch%20sized%20heart%20and%20dreams%20of%20marshmallow%20faeries%20filling%20my%20head.%20Doggonit!%20This%20did%20the%20trick%20-%20I%E2%80%99m%20CURED!%20Watch%20out%20though,%20to%20keep%20my%20spirits%20high,%20I%20may%20have%20the%20plow%20through%20some%20of%20these%20darlings%20daily%20from%20now%20until%20next%20Wednesday!%3C/p%3E%3Cp%3EPeppermint%20Marshmallows%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPour%20%C2%BD%20cup%20of%20the%20water%20into%20the%20bowl%20of%20a%20stand%20mixer%20with%20whisk%20attachment%20and%20sprinkle%20gelatin%20over%20the%20surface;%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20small%20saucepan%20combine%20the%20remaining%20%C2%BD%20cup%20water,%20granulated%20sugar,%20corn%20syrup%20and%20salt.%20Over%20medium%20high%20heat%20and%20with%20a%20candy%20thermometer%20attached%20to%20the%20side%20of%20the%20pan,%20cook%20the%20mixture%20until%20it%20reaches%20240%20degrees%20F.%20Immediately%20remove%20the%20pan%20from%20the%20heat%20once%20temperature%20is%20reached.%3C/p%3E%3Cp%3ETurn%20the%20mixer%20on%20low%20speed%20and,%20while%20running,%20slowly%20pour%20the%20sugar%20syrup%20down%20the%20side%20of%20the%20bowl%20into%20the%20gelatin%20mixture.%20Once%20all%20the%20syrup%20has%20been%20added,%20increase%20the%20speed%20to%20high%20and%20continue%20to%20whip%20until%20the%20mixture%20becomes%20very%20thick%20and%20is%20lukewarm,%20approximately%2012%20to%2015%20minutes.%20Add%20the%20peppermint%20extract%20during%20the%20last%20minute%20of%20whipping,%20starting%20with%20the%20smaller%20amount%20and%20increasing%20according%20to%20taste%20and%20desired%20strength.%3C/p%3E%3Cp%3EWhile%20the%20mixture%20is%20whipping%20prepare%20the%20pans:%3C/p%3E%3Cp%3ESift%20together%20the%20confectioners%E2%80%99%20sugar%20and%20cornstarch%20in%20a%20small%20bowl.%20Using%20a%20paper%20towel,%20spread%20the%20oil%20on%20the%20pans%20until%20it%20is%20well%20coated.%20Add%20the%20sugar%20and%20cornstarch%20mixture%20and%20move%20around%20to%20completely%20coat%20the%20bottom%20and%20sides%20of%20the%20pan.%20Return%20the%20remaining%20mixture%20to%20the%20bowl%20for%20later%20use%20(I%20had%20to%20mix%20up%20a%20bit%20more%20as%20my%20marshmallows%20were%20on%20the%20stickier%20side).%3C/p%3E%3Cp%3EPour%20the%20lukewarm%20mixture%20into%20the%20prepared%20pan,%20using%20a%20lightly%20oiled%20spatula%20for%20spreading%20evenly%20into%20the%20pan.%20%20Drop%20about%206%20drops%20of%20food%20coloring%20around%20the%20surface%20of%20the%20marshmallows%20and%20use%20a%20toothpick%20or%20knife%20to%20swirl%20the%20red%20into%20the%20marshmallows.%20Dust%20the%20top%20with%20remaining%20sugar%20and%20cornstarch%20mixture%20to%20lightly%20cover.%20Reserve%20the%20rest%20for%20later.%20Allow%20the%20marshmallows%20to%20sit%20uncovered%20for%20about%2024%20hours.%20Turn%20the%20marshmallows%20out%20onto%20a%20cutting%20board%20and%20use%20oiled%20scissors%20to%20cut%20into%20desired%20shapes.%20Once%20cut,%20dredge%20the%20marshmallows%20with%20the%20remaining%20powdered%20sugar/corn%20starch%20mixture.%20Shake%20the%20marshmallows%20in%20a%20fine%20mesh%20sieve%20to%20remove%20excess%20clumps.%3C/p%3E%3Cp%3EStore%20in%20an%20airtight%20container%20for%20up%20to%203%20weeks.%3C/p%3E){kind=link}
