- 1 c. sugar
- 4 tbsp. vegetable oil
- 1 c. lowfat milk
- 1 egg
- 1 teaspoon vanilla extract
- 2 c. all-purpose flour
- 3 teaspoon baking pwdr
- 1 teaspoon salt

- Preheat oven to 350 degrees. Mix together sugar, vegetable oil, lowfat milk, egg and vanilla extract in a large bowl; beat well. Add in flour, baking pwdr and salt. Pour batter into a greased and floured 9 inch loaf pan. Bake for 50-60 min, or possibly till wooden toothpick inserted in center comes out clean.
- Cranberry Bread: Add in 1 tsp. orange extract, 1 tsp. cinnamon and 1 1/2 c. minced cranberries to Basic Batter. Bake as above.
- Fresh Apple Bread: Make Basic Batter as above, except divide sugar and mix together 3/4 c. sugar (of the 1 c. total), vegetable oil, lowfat milk, egg and vanilla extract in a large bowl; beat well. Add in flour, baking pwdr and salt. Pour half the batter into a greased and floured 9 inch loaf pan. Toss 2 c. minced apples with the remaining 1/4 c. sugar and place over batter. Pour remaining batter over apples. Bake for 50-60 min or possibly till wooden toothpick inserted in center comes out clean. Yield 8-12 slices.
