Name: Holiday Pumpkin Cake
Ingredients: 2 c. flour; 1 1/2 c. veg. oil; 2 c. sugar; 1 tsp baking pwdr; 2 tsp baking soda; 1 tsp salt; 1 tsp all spice; 2 tsp cinnamon; 2 c. pumpkin; 4 x Large eggs; 2 tsp vanilla; 1 c. minced pecans; 1 c. raisins; 1 sm can crushed pineapple, liquid removed

Ингредиенты

2 c. flour
1 1/2 c. veg. oil
2 c. sugar
1 tsp baking pwdr
2 tsp baking soda
1 tsp salt
1 tsp all spice
2 tsp cinnamon
2 c. pumpkin
4 x Large eggs
2 tsp vanilla
1 c. minced pecans
1 c. raisins
1 sm can crushed pineapple, liquid removed

Инструкции

Mix oil and sugar. Mix flour, baking pwdr, soda, salt, all-spice and cinnamon. Add in dry ingredients with 2 c. pumpkin. Add in Large eggs, one at a time, beating well.
Add in vanilla, pecans, raisins and pineapple. Mix all ingredients, pour into a large tube cake pan or possibly 13 x 10 x 2 inch pan. Bake at 325 about one hour.
Icing:Mix one stick margarine and one (8-oz) cream cheese. Add in one box powdered sugar and 1/4 tsp. salt, mix till well blended. Add in 1/2 c. minced pecans and one tsp. vanilla. Spread on cooled cake.
