Рецепт Herb Marinated Chicken With Pepper Nicoise Olive Relish

  • 1/4 c. sherry vinegar
  • 2 Tbsp. honey
  • 1 Tbsp. ancho chile pwdr
  • 10 x garlic cloves coarsely minced
  • 1/4 c. fresh oregano leaves
  • 1 c. extra virgin olive oil
  • 2 whl chickens - (2 1/2 lbs ea) butterflied
  • 8 x piquillo peppers liquid removed, and thinly sliced
  • 1/3 c. coarsely-minced pitted Nicoise olives
  • 1 Tbsp. chopped garlic
  • 1 Tbsp. finely-minced fresh thyme leaves
  • 1/4 c. coarsely-minced parsley
  • 1/4 c. sherry vinegar
  • 1 Tbsp. honey Salt to taste Freshly-grnd black pepper to taste
  • 5 x all-purpose potatoes
  • 2 Tbsp. unsalted butter
  • 3 Tbsp. extra-virgin extra virgin olive oil Kosher salt to taste
  • 1/4 c. finely-minced flat-leaf parsley

Инструкции

  1. For the Chicken: Combine all ingredients except chicken in large baking dish. Add in chickens and turn to coat. Cover and marinate in the refrigerator for 2 hrs.
  2. Preheat oven to 375 degrees. Remove chicken from marinade and sear skin-side down in a large saute/fry pan till golden, then turn and cook other side till golden. Place chickens on baking sheet and bake till cooked through, about 15 to 17 min.
  3. For the Relish: Combine all ingredients in a bowl.
  4. For the Potatoes: Bake potatoes in a 375 degree oven till soft. Peel and place them in a hot bowl. Add in butter and extra virgin olive oil and mash with a fork till mixed but not smooth. Season with salt and mix in parsley.
  5. This recipe yields 4 servings.
