- 1/4 c. sherry vinegar
- 2 Tbsp. honey
- 1 Tbsp. ancho chile pwdr
- 10 x garlic cloves coarsely minced
- 1/4 c. fresh oregano leaves
- 1 c. extra virgin olive oil
- 2 whl chickens - (2 1/2 lbs ea) butterflied
- 8 x piquillo peppers liquid removed, and thinly sliced
- 1/3 c. coarsely-minced pitted Nicoise olives
- 1 Tbsp. chopped garlic
- 1 Tbsp. finely-minced fresh thyme leaves
- 1/4 c. coarsely-minced parsley
- 1/4 c. sherry vinegar
- 1 Tbsp. honey Salt to taste Freshly-grnd black pepper to taste
- 5 x all-purpose potatoes
- 2 Tbsp. unsalted butter
- 3 Tbsp. extra-virgin extra virgin olive oil Kosher salt to taste
- 1/4 c. finely-minced flat-leaf parsley

- For the Chicken: Combine all ingredients except chicken in large baking dish. Add in chickens and turn to coat. Cover and marinate in the refrigerator for 2 hrs.
- Preheat oven to 375 degrees. Remove chicken from marinade and sear skin-side down in a large saute/fry pan till golden, then turn and cook other side till golden. Place chickens on baking sheet and bake till cooked through, about 15 to 17 min.
- For the Relish: Combine all ingredients in a bowl.
- For the Potatoes: Bake potatoes in a 375 degree oven till soft. Peel and place them in a hot bowl. Add in butter and extra virgin olive oil and mash with a fork till mixed but not smooth. Season with salt and mix in parsley.
