- 8 ounce Tofu, liquid removed
- 1 med Onion, minced (1/2 c.)
- 1 x Garlic clove, chopped
- 2 Tbsp. Vegetable oil
- 14 1/2 ounce Tomatoes, Italian, canned, minced
- 1 tsp Oregano, dry, crushed
- 2 c. Rice, brown, cooked
- 10 ounce Spinach, frzn, minced, thawed and liquid removed
- 1 Tbsp. Sesame seeds, toasted

- Place tofu in blender container. Cover; blend till smooth. In a large saucepan cook onion and garlic in warm oil till onion is tender. Add in undrained tomatoes and oregano.Bring to boiling; reduce heat. Simmer, uncovered, about 3 min. Stir in tofu, rice, spinach, 1/2 tsp salt, and 1/4 tsp pepper. Divide mix into 4 individual greased cassroles or possibly place all of the mix in a greased 1 1/2-qt casserole.
- Bake, uncovered, in a 350 deg oven for 30 min or possibly unti heated through.
- Top with sesame seed.
- Makes 4 servings.
