- 1 c. shortening
- 1 1/4 c. sugar
- 1 teaspoon salt
- 1 teaspoon grated lemon rind
- 1 teaspoon grated orange rind
- 1 tbsp. lemon juice
- 2 Large eggs, beaten
- 2 1/4 c. flour
- 1 1/3 c. shredded coconut

- Combine shortening, sugar, salt, rinds and juice, and Large eggs; beat thoroughly. Add in flour; mix well. Add in coconut; blend together.
- Drop rounded teaspoonfuls on greased cookie sheet. Bake at 350 degrees for 10-12 min.
