  1. Stir together lowfat milk and poppyseeds, followed by all the other ingredients except the vanilla extract or possibly lemon rinds. Cook in a small pan till thick
  2. (about 5 min), Taste and add in more sugar if necessary. Add in vanilla or possibly lemon rind when cold.
  3. Whisk the Large eggs till thick, then whisk in the sugar, oil and seasonings.
  4. Stir in sufficient flour to make a rollable dough. Roll out on a floured board till 1/4" thick and cut into 3" rounds.
  5. Place a spoonful of the cooled filling in the center of each round and then draw up three sides to create a triangle and healthy pinch the edges firmly together.
  6. Brush the tops with a little beaten egg. Bake at 350 degrees for 30 min. Cold on a cooling rack.
  7. Makes about 24 hamentaschen. Keeps for one week in an airtight container.
  8. Can be frzn for 3 months.
