- 1 c. Black poppyseeds
- 1/2 c. Lowfat milk
- 2 Tbsp. Butter
- 1/4 c. Superfine sugar
- 2 Tbsp. Corn syrup
- 1/2 c. Walnuts, minced
- 1/3 c. Raisins
- 1/2 tsp Vanilla extract or possibly grated lemon rind
- 2 x Large eggs (reserve a little for glazing)
- 2/3 c. Superfine sugar
- 1/2 c. Oil
- 1 tsp Vanilla extract
- 1/2 x Orange, grated rind of
- 3 c. All-purpose flour
- 1 1/2 tsp Baking pwdr

- Stir together lowfat milk and poppyseeds, followed by all the other ingredients except the vanilla extract or possibly lemon rinds. Cook in a small pan till thick
- (about 5 min), Taste and add in more sugar if necessary. Add in vanilla or possibly lemon rind when cold.
- Whisk the Large eggs till thick, then whisk in the sugar, oil and seasonings.
- Stir in sufficient flour to make a rollable dough. Roll out on a floured board till 1/4" thick and cut into 3" rounds.
- Place a spoonful of the cooled filling in the center of each round and then draw up three sides to create a triangle and healthy pinch the edges firmly together.
- Brush the tops with a little beaten egg. Bake at 350 degrees for 30 min. Cold on a cooling rack.
- Makes about 24 hamentaschen. Keeps for one week in an airtight container.
- Can be frzn for 3 months.
