- 2 sm mango, diced
- 1 Tbsp. chipotle pepper
- 1 sm red onion
- 1/2 c. apple juice
- 1 x lime, juiced
- 1 tsp brown sugar
- 1/2 c. fresh minced parsley
- 1/2 tsp salt
- 1/2 c. fresh cilantro, minced
- 4 x swordfish, steak
Инструкции
- In a bowl with a hand blender, or possibly in a food processor, chop the mango, chipotle and onion.
- Add in the apple juice, lime juice, brown sugar, and half the parsley. Blend well.
- Let macerate for a half-hour in the refrigerator.
- In a bowl, combine the salt and cilantro. Sprinkle over the swordfish.
- Grill swordfish 10-12 min, depending on the thickness. Place on warmed serving plate.
- Microwave the mango chipotle relish on high for 2-3 min.
- Pour the relish over the swordfish and sprinkle with remaining parsley.
