%20dinner%20options%20available.%20But%20I%20had%20yet%20to%20try%20Marilyn's%20grilled%20portobello%20burgers%20so%20I%20bellied%20up%20(literally,%20I'm%20now%20two%20weeks%20away%20from%20my%20due%20date)%20to%20her%20station%20and%20placed%20my%20order.%20After%20a%20bit%20of%20a%20wait,%20I%20forked%20over%20my%20money%20and%20headed%20back%20to%20our%20blanket%20on%20the%20grass%20with%20my%20mushroom%20%22burger%22%20in%20hand.%3C/p%3E%3Cp%3EI%20was%20pretty%20hungry%20(another%20by-product%20of%20pregnancy)%20so%20I%20tore%20into%20it.%20Mmmmmm...%20juicy,%20meaty,%20flavorful,%20and%20hearty.%20By%20the%20end%20I%20was%20a%20mess%20(they're%20not%20so%20easy%20to%20eat%20neatly%20-%20probably%20a%20bad%20idea%20for%20a%20first%20date...)%20but%20I%20sure%20was%20happy.%20The%20next%20week%20I%20went%20back%20and%20ordered%20another%20one.%20And%20the%20following%20week,%20I%20started%20buying%20portobello%20mushrooms%20to%20make%20these%20for%20myself%20at%20home.%20I've%20since%20made%20them%20three%20times%20and%20see%20no%20reason%20to%20stop.%3C/p%3E%3Cp%3EThe%20preparation%20is%20extremely%20simple%20(basically%20a%20requirement%20for%20me%20to%20even%20consider%20a%20recipe%20right%20now%20as%20extended%20standing%20at%20sink%20or%20stove%20makes%20my%20back%20ache)%20and%20the%20results%20are%20always%20spot%20on.%3C/p%3E%3Cp%3EThe%20marinade%20is%20up%20to%20you%20but%20I%20have%20been%20liking%20using%20a%20combination%20of%20olive%20oil,%20lemon%20juice,%20sea%20salt,%20black%20pepper,%20fresh%20rosemary,%20oregano%20and%20some%20balsamic%20glaze%20or%20vinegar%20for%20sweetness%20and%20depth.%20If%20you're%20in%20a%20rush,%20you%20could%20even%20(gasp!)%20use%20some%20prepared%20salad%20dressing%20and%20I'm%20sure%20the%20results%20would%20be%20good.%3C/p%3E%3Cp%3ELet%20the%20'shrooms%20soak%20in%20all%20that%20goodness%20for%20a%20while%20(a%20few%20hours%20is%20great).%20Then%20fire%20up%20your%20grill%20and%20get%20going.%20They%20do%20take%20a%20little%20longer%20to%20grill%20than%20a%20meat-based%20burger%20would.%3C/p%3E%3Cp%3ETop%20with%20cheese%20(and%20let%20it%20melt%20on%20the%20grill),%20sliced%20fresh%20tomato%20and%20lettuce%20or%20whatever%20seems%20appealing.%20Although%20I%20topped%20this%20batch%20with%20goat%20cheese%20(and%20arugula%20and%20tomatoes%20from%20our%20garden),%20I%20have%20to%20admit%20that%20I%20have%20been%20even%20happier%20with%20less%20sophisticated%20cheeses%20like%20cheddar,%20swiss%20or%20provolone%20-%20the%20goat%20cheese%20is%20nice%20but%20ends%20up%20competing%20with%20the%20mushroom%20a%20little%20too%20much%20for%20my%20taste.%3C/p%3E%3Cp%3EToast%20your%20bun%20and%20try%20to%20get%20one%20that%20is%20a%20bit%20bigger%20than%20the%20mushroom%20as%20they%20are%20still%20very%20juicy%20after%20grilling%20and%20it's%20helpful%20to%20have%20a%20little%20bit%20of%20extra%20buffer%20between%20your%20hands%20and%20all%20that%20goodness.%3C/p%3E%3Cp%3EGrilled%20Portobello%20Mushrooms%3C/p%3E%3Cp%3EServes%202%20(double%20or%20triple%20as%20needed)%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E*%202%20large%20Portobello%20mushrooms,%20cleaned,%20with%20stems%20removed%3C/p%3E%3Cp%3EFor%20the%20marinade:%3C/p%3E%3Cp%3E*%20Mustard%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Make%20the%20marinade%20and%20place%20the%20mushrooms%20in%20it%20(you%20can%20either%20use%20a%20ziplock%20bag%20to%20ensure%20even%20coating%20or%20just%20put%20them%20in%20a%20bowl%20or%20shallow%20baking%20dish%20and%20remember%20to%20turn%20them%20a%20few%20times.)%20Let%20soak%20for%20at%20least%20half%20an%20hour%20and%20up%20to%204%20hours.%3C/p%3E%3Cp%3E2.%20Prepare%20a%20medium-hot%20grill.%20Place%20the%20mushrooms%20on%20the%20grill,%20gill-side%20down%20and%20cover.%20Cook%20until%20the%20mushrooms%20begin%20to%20soften,%20roughly%205%20minutes,%20then%20flip%20them%20over%20and%20grill%20for%20another%207%20or%20so%20minutes%20until%20soft%20and%20juicy%20when%20poked%20with%20a%20fork.%3C/p%3E%3Cp%3E3.%20Top%20each%20mushroom%20with%20sliced%20cheese.%20Toss%20the%20buns%20onto%20the%20grill%20cut-side%20down.%20Close%20the%20grill%20and%20cook%20for%20roughly%201%20minute.%20Open%20the%20grill%20up,%20turn%20it%20off,%20put%20your%20mushrooms%20on%20your%20buns,%20top%20with%20tomato,%20lettuce,%20or%20whatever%20you%20see%20fit%20and%20enjoy.%20Don't%20forget%20napkins!%3C/p%3E){kind=link}
