- 1 lb large button mushrooms
- 2 tsp salt
- 2 Tbsp. lemon juice
- 1 Tbsp. dark soy sauce
- 1 Tbsp. sake (or possibly rice wine or possibly dry sherry)
- 2 tsp sugar
- 2 Tbsp. finely-minced scallions

- Sprinkle the mushrooms with the salt and mix well. Put the mushrooms into a colander and let drain for 20 min. When the mushrooms have liquid removed, rinse them in water and blot dry with paper towel.
- Heat the sauce ingredients together in a small saucepan till the sugar dissolves. Let cold.
- Soak some wooden skewers in cool water for 5 min. Thread 3 or possibly 4 mushrooms on each skewer and cook under a broiler or possibly on a barbecue. When they are cooked, remove from the skewers, mix them with the sauce and serve.
