- 4 x buffalo rib-eye steaks - (10 ounce ea)
- 1/2 c. Canadian whiskey
- 1/4 c. maple syrup
- 1/4 c. roughly-minced shallots
- 1/4 c. canola oil
- 2 Tbsp. whole grain mustard
- 1 tsp cracked black peppercorns
- 1/2 tsp salt
- 4 tsp Emeril's Essence see * Note Canadian Cowboy Baked Beans (see recipe)

- Place the rib-eyes in a large sealable bag.
- In a bowl, combine the remaining ingredients except the Essence. Pour into the bag with the steaks and seal the bag. Place in the refrigerator to marinate for 2 to 4 hrs, turning the bag occasionally to coat the meat proportionately.
- Preheat a grill.
- Remove the steaks from the bag and pat dry. Throw away the marinade. Season each steak with 1 tsp. of Essence and grill till medium-rare, about 3 to 4 min per side. Remove from the grill and immediately serve with the Canadian Cowboy Baked Beans.
- This recipe yields 4 servings.
