.%20%20As%20it%20is%20our%20twentieth%20day%20of%20weather%20over%20100%20degrees,%20something%20light%20and%20cool%20was%20a%20great%20option.%3C/p%3E%3Cp%3EHaving%20grilled%20a%20surplus%20of%20chicken%20a%20couple%20of%20nights%20ago,%20I%20had%20a%20great%20%E2%80%9Cgo-to%E2%80%9D%20starter%20for%20this%20meal.%3C/p%3E%3Cp%3EI%20created%20an%20Asian%20type%20dressing,%20grabbed%20some%20organic%20field%20greens%20(from%20the%20store,%20not%20from%20my%20garden%E2%80%94it%20is%20too%20dang%20hot%20for%20lettuce),%20and%20bought%20some%20fresh%20pineapple%20from%20the%20produce%20section%20of%20the%20grocery%20store.%20%20(I%20am%20also%20not%20in%20Hawaii%20so%20the%20pineapple%20is%20definitely%20not%20local%20either.)%3C/p%3E%3Cp%3EBut,%20I%20did%20have%20peppers%20in%20the%20garden!%3C/p%3E%3Cp%3EColorful%20peppers%20from%20our%20own%20garden!%3C/p%3E%3Cp%3EI%20sliced%20up%20some%20of%20the%20leftover%20teriyaki%20chicken,%20topped%20the%20salad%20greens%20with%20them,%20and%20arranged%20peppers%20and%20pineapple%20around%20the%20plate.%20%20Then%20I%20drizzled%20on%20a%20tablespoon%20or%20two%20of%20salad%20dressing.%3C/p%3E%3Cp%3EThrow%20ingredients%20in%20a%20blender%20and%20pulse%20until%20incorporated.%3C/p%3E%3Cp%3EThis%20is%20a%20really%20light%20dressing.%20%20Sesame%20seeds%20could%20be%20added%20to%20this%20dressing%20or%20simply%20sprinkled%20on%20top%20of%20the%20salad.%20%20I%20am%20going%20to%20use%20this%20dressing%20as%20a%20marinade%20for%20pork%20later%20this%20week.%3C/p%3E%3Cp%3EAfter%20two%20dinners%20and%20multiple%20lunch%20sandwiches%20for%20the%20hubby%20and%20one%20salad%20lunch%20for%20me,%20the%20surplus%20chicken%20is%20now%20gone.%3C/p%3E){kind=link}
