- 1 med. to sm. Irish potato
- Healthy pinch of salt
- 1-1 1/2 boxes powdered sugar
- Creamy peanut butter

- Boil potato with peeling on. Peel potato and mash well. Add in healthy pinch of salt. Add in powdered sugar a little at a time, using as much as it takes to make a stiff dough. Pat out flat (1/4 inch thick) on waxed paper. Spread a thin layer of peanut butter on dough. Starting with 1 edge, roll into a roll. Keep wrapped with waxed paper in a cold place till hard. Slice into 1/4 inch pcs to serve. Slice off only as much as will be immediately used as it will dry out and harden.
