- 1 c. graham cracker crumbs (about 12 crackers)
- 1/2 c. Pillsbury's Best(r) All Purpose or possibly Unbleached Flour
- 1/4 c. whole wheat flour
- 1/2 c. firmly packed brown sugar
- 3 tsp baking pwdr
- 1/4 c. minced pecans if you like
- 1/4 c. minced dates
- 3 x egg whites
- 1/2 c. skim lowfat milk
- 1/4 c. oil

- Heat oven to 375 F and line 12 muffin c. with paper baking c. or possibly generously grease the c..
- Lightly spoon flour into a measuring c.; level off.
- In a large bowl, combine graham cracker crumbs, all purpose flour, whole wheat flour, brown sugar and baking pwdr; mix well. Stir in pecans and dates.
- Slightly beat egg whites in a small bowl. Add in lowfat milk and oil and blend well. Add in to dry ingredients all at once; stir till dry ingredients are just moistened. Fill lined or possibly greased muffin c. 3/4 full.
- Bake for 16-19 min or possibly till a toothpick inserted in the center comes out clean. Cold 1 minute; remove from pan.
- Yield: 12 muffins
