Light and savory, a good accompaniment to a hearty soup

- 1 pre-made pie crust par-baked
- 1/2 cup shallots thin sliced
- 1 tbsp butter
- 9 oz goat cheese
- 3/4 tsp Herbes de Provence
- 3 large eggs
- 1 cup heavy cream
- salt and pepper to taste

- pre-heat oven to 350
- spray a square of aluminum foil with nonstick spray and place sprayed side into pie crust and fill with pie weights or beans and par-bake for 20 minutes.
- while crust is baking saute shallots in butter til browned, set aside
- next place goat cheese and Herbes in food processor and pulse till crumbly
- add eggs, cream, salt and pepper (just a pinch) and pulse to mix thoroughly
- remove foil with pie weights from crust and spread sauteed shallots in crust
- pour cheese mixture over shallots to fill pie crust
- tap to remove bubbles and bake for about 40 minutes
- allow to cool about 10 minutes before slicing
- serve warm
