You already know the story, Thursdays at work is buffalo chicken day. I know, I keep talking about it. I didn't even used to like buffalo chicken, but then one day, many years ago, a restaurant accidentally served me a buffalo chicken sandwich. Instead of refusing it and waiting for the right sandwich, I just ate it. (Pre GF Days) I fell in love. Then there was the buffalo chicken dip at another restaurant. It was all down hill from there. I was so excited to discover that Frank's Buffalo Sauce is GF/DF!
I have to admit, I've been cheating on the chicken tenders, buying Bell & Evans and cooking them in the oven then dipping them in the buffalo sauce. It works, but it's much better if you make the tenders yourself. The photo above…

%20I%20fell%20in%20love.%20Then%20there%20was%20the%20buffalo%20chicken%20dip%20at%20another%20restaurant.%20It%20was%20all%20down%20hill%20from%20there.%20I%20was%20so%20excited%20to%20discover%20that%20Frank's%20Buffalo%20Sauce%20is%20GF/DF!%3C/p%3E%3Cp%3EI%20have%20to%20admit,%20I've%20been%20cheating%20on%20the%20chicken%20tenders,%20buying%20Bell%20&%20Evans%20and%20cooking%20them%20in%20the%20oven%20then%20dipping%20them%20in%20the%20buffalo%20sauce.%20It%20works,%20but%20it's%20much%20better%20if%20you%20make%20the%20tenders%20yourself.%20The%20photo%20above%20is%20hand-breaded%20tenders.%20It's%20so%20easy!%20Heat%20a%20little%20oil%20in%20a%20pan.%20Set%20up%20your%20assembly%20line,%20I%20use%20buttermilk%20in%20this%20case%20=%201%20C%20of%20rice%20milk%20+%201%20Tbs%20of%20vinegar.%20Let%20the%20buttermilk%20sit%20for%205%20minutes,%20then%20let%20the%20chicken%20sit%20in%20the%20buttermilk%20for%205%20minutes.%20Roll%20the%20chicken%20in%20GF%20Bread%20Crumbs%20(I%20use%20Gillian's)%20and%20fry%20in%20the%20oil.%20A%20few%20minutes%20on%20each%20side.%20Let%20the%20fried%20chicken%20rest%20on%20paper%20towels%20to%20get%20rid%20of%20some%20of%20the%20excess%20oil%20before%20dipping%20into%20the%20buffalo%20cause.%20YUM!%3C/p%3E%3Cp%3EBuffalo%20chicken%20is%20HOT%20and%20what%20better%20to%20cut%20the%20heat%20then%20bleu%20cheese%20dressing?%20Well,%20I%20can't%20just%20go%20out%20and%20buy%20a%20bottle,%20and%20bleu%20cheese%20is%20out%20of%20the%20question%20for%20me%20anyway,%20so%20I%20had%20to%20come%20up%20with%20a%20compromise.%20I%20searched%20bleu%20cheese%20dressing%20recipes%20and%20made%20up%20my%20own%20fake%20version.%20I%20haven't%20perfected%20it%20yet,%20but%20it%20works%20pretty%20well.%20In%20a%20bowl%20I%20combine%20some%20mayo%20and%20some%20dairy%20free%20sour%20cream.%20Add%20a%20small%20splash%20of%20cider%20vinegar%20or%20regular%20vinegar%20and%20a%20squeeze%20of%20lemon%20juice.%20Sprinkle%20in%20some%20garlic%20and%20onion%20powder,%20salt%20and%20pepper.%20Mix%20it%20all%20up.%20Adjust%20to%20taste.%20Viola!%20It's%20definitely%20NOT%20bleu%20cheese,%20but%20it%20sure%20does%20the%20trick.%20I%20prefer%20my%20buffalo%20chicken%20served%20on%20a%20wrap%20(Food%20for%20Life)%20with%20lettuce%20and%20tomato%20and%20dipping%20sauce%20on%20the%20side.%20I%20just%20might%20have%20this%20for%20dinner%20again%20tonight!%20The%20sandwich%20in%20the%20photo%20above%20was%20made%20with%20a%20schar%20sub%20roll,%20but%20it%20was%20too%20much%20bread.%20A%20wrap%20works%20much%20better.%3C/p%3E){kind=link}
