- 10 sm Ripe pears, (about 3 pounds)
- 1 c. Pear nectar
- 4 x Dry pear halves, minced (available at health foods stores andspecialty foods shops)
- 1/4 c. Sugar, or possibly to taste
- 2 Tbsp. Unsalted butter
- 1 Tbsp. Julienne strips peeled fresh ginger
- 1 Tbsp. Fresh lemon juice
- 1 x Cinnamon stick
- 1 tsp Vanilla

- Peel, core, and finely chop fresh pears. In a saucepan simmer fresh pears, nectar, dry pears, sugar, butter, ginger, lemon juice, cinnamon stick, and a healthy pinch of salt till pears are tender, about 25 min. Remove pan from heat and stir in vanilla. Throw away cinnamon stick.
- Force pear mix through a food mill or possibly ricer, or possibly in a food processor puree to desired consistency.
- Makes about 4 c..
