- 2 x egg whites
- 1/8 tsp salt
- 1/8 tsp cream of tartar
- 1/2 c. white sugar
- 1/2 tsp vanilla extract
- 1/2 c. finely minced pecans
- 1 x (4 oz) bar German sweet chocolate
- 3 Tbsp. water
- 1 tsp vanilla extract
- 1 c. whipping cream

- Method:1. Preheat oven to 300 degrees F (150 degrees C). Grease one 8 inch pie pan.
- 2. Beat the egg whites, salt, and cream of tartar together till foamy.
- Gradually beat in the sugar and 1/2 tsp. of the vanilla. Beat on high speed till stiff and glossy. Mix in the minced pecans. Spoon meringue into the prepared pan forming a slight nest.
- 3. Bake at 300 degrees F (150 degrees C) for 50 to 55 min. Let cold completely.
- 4. While the crust is baking, heat the German chocolate with the water. Let cold till thickened. Stir in the remaining 1 tsp. of vanilla.
- 5. Whip the whipping cream and fold into the cooled chocolate mix. Pile into the cooled pie shell and chill.
- Makes 1 -8 inch pie
