- 8 ounce uncooked large shrimp peeled, deveined
- 1 x zucchini sliced into rounds
- 1 tsp garam masala seasoning Salt to taste Freshly-grnd black pepper to taste
- 1 Tbsp. butter
- 1 Tbsp. minced fresh cilantro
- 2 tsp fresh lemon juice
- 1 pkt garlic and herb rice pilaf - (6.3 ounce) cooked according to package instructions

- Toss first 3 ingredients in bowl to blend. Sprinkle with salt and pepper.
- Heat butter in medium skillet over medium-high heat. Remove zucchini from bowl; saute/fry till slightly browned, about 1 minute. Add in shrimp; saute/fry till opaque in center, about 2 min. Remove from heat. Stir in cilantro and lemon juice. Season with salt and pepper.
- Divide rice between 2 plates. Spoon shrimp and zucchini over rice.
