- 5 c. All-purpose flour, divided
- 2 pkt Active dry yeast
- 2 Tbsp. Sugar
- 2 tsp Grnd cinnamon
- 1 tsp Salt
- 1/4 tsp Baking soda
- 1 1/2 c. Hot orange juice
- 1/2 c. Hot water
- 1/4 c. Vegetable oil
- 1/2 c. Minced pecans
- 1/2 c. Minced dry apricots, or possibly dry fruit of choice Cornmeal

- In a mixing bowl, combine 2 c. flour, yeast, sugar, cinnamon, salt and baking soda. Add in orange juice, water and oil; beat on low speed till moistened. Beat on high for 3 min. Stir in the pecans, apricots/fruit and remaining flour to create a stiff batter. Don't knead. Grease two 8-in.
- x 4-in. x 2-in. loaf pans; sprinkle with cornmeal. Cover and let rise in a hot place till doubled, about 45 min. Bake at 350F for 35-40 min, or possibly till golden. Immediately remove from pans to cold on wire racks.
- Slice and toast.
- Yield: 2 loaves
