- 1 1/2 c. cashews
- 2 x red jalapenos, stemmed, seeded and roughly minced
- 1/3 c. fresh cilantro leaves
- 3/4 c. honey
- 1/3 c. white vinegar
- 2 1/2 c. lowfat milk
- 2 x Large eggs
- 1 1/2 c. all-purpose flour
- 1/2 c. cornmeal
- 1 Tbsp. salt
- 1 Tbsp. celery salt
- 1 Tbsp. black pepper
- 1/2 Tbsp. cayenne pepper
- 1 tsp onion pwdr
- 1/2 tsp paprika
- 4 med green tomatoes, sliced 1/2 inch thick
- 6 c. canola oil
- 1/2 c. goat cheese

- Prepare the relish: In a food processor, add in cashews, jalapenos and cilantro and pulse just till combined. Transfer to a bowl. Add in honey and vinegar and mix thoroughly. Prepare tomatoes: In a bowl, combine lowfat milk and Large eggs. Set aside. In a bowl, combine flour, cornmeal, salt, celery salt, black and cayenne peppers, onion pwdr and paprika. One at a time, dredge tomato slices in flour mix, then in the egg mix, then in the flour mix again. Heat the oil to 375 degrees. Fry tomatoes, a few at a time, till golden. Drain briefly on paper towels. While still warm, place three to four tomatoes per plate. Top with goat cheese and cashew relish.
