- Beat yolks till foamy... gradually add in 3/4 c. sugar; beat till thickened. In a large bowl, beat egg whites till soft peaks form. Fold egg yolk mix into egg whites. Stir in cream and remaining 3/4 c. sugar.
- Transfer into a three qt saucepan and cook over medium heat, stirring occasionally till mix coats a spoon. Don't boil! Add in vanilla, refrigeratethoroughly. Freeze.
- Makes 3 qts.
