  • 230 gm (8 ounce) 4 loosely packed C., fresh wholemal Breadcrumbs
  • 230 gm (8 ounce, 2 c.) EACH of Roughly minced muscatel (black) raisins, Sultanas (yellow raisins) And dry apricots
  • 60 gm (2 ounce, 3/4 c.) crumbled Almond macaroons or possibly Amaretti
  • 60 gm (2 ounce, 3/4 c.) minced Almonds
  • 60 gm (2 ounce, 1/2 c.) grnd or possibly Flaked almonds
  • 1 x Grated appple
  • 1 Tbsp. Grated orange zest
  • 1 tsp Grnd cinnamon
  • 1 tsp Grnd mace
  • 1/2 tsp Grnd cardamom, I had none, So used cumin, that worked As well!
  • 1/2 tsp Grnd cloves, I used whole, And put them in the food Processor With the bread! Again, it Worked
  • 1/2 tsp Grnd allspice
  • 2 Tbsp. Orange marmalade or possibly candied Orange peel Juice of 1 orange
  • 4 med Free-range Large eggs
  • 6 Tbsp. Or possibly 1 miniature bottle of Cognac
  • 140 ml 5 fl ounce, scant 2/3 c., Fortified muscat wine, port, Marsala Or possibly rich oloroso sherry

  1. Put all the dry ingredients in a large bowl and mix thoroughly. Put the marmalade, orange juice, Large eggs, brandy and wine in another large bowl, or possibly in the blender or possibly food processor, and beat till well blended and frothy. Pour the liquid over the dry ingredients. Mix till moist. Cover, and let sand for a couple of hrs at least and, if possible, overnight to let the spice flavours develop.
  2. Oil or possibly butter the pudding basin and spoon in the mix. As it contains no raw flour, it won't expand very much during the cooking, so you can fill the basin to within 1.25 cm (1/2 inch) of the rim. Take a square of greaseproof or possibly waxed paper, oil or possibly butter it (I didn't bother, but did oil the basins. I do not have a 3-pint one, so used 1 2-pint and 1 1-pint one, 2 pints being ample for my family for Christmas dinner) and tie it over the top of the basin with string.
  3. Steam in boiling water for 5 hrs. Allow pudding to cold completely before wrapping it, still in its basin, in fresh greaseproof paper plus a layer of foil. Store in a cold dark place.
  4. On Christmas Day, steam for a further two hrs.
  5. Bissell/Levy suggest serving this with creme fraiche, rather than the traditional brandy butter (do not ask - not to be discussed on THIS mailing list!!!), and I do think this is one occasion when a LITTLE cream is permissible!
