- Serves 4.
- Arrange fish in a single layer in a non-metal, 2 qt square or possibly oblong casserole dish, with thickest parts or possibly larger pcs toward the outside. Add in lemon juice, salt and pepper and bay leaf. Cover with microwave-safe plastic wrap. Turn back corner of wrap to allow excess steam to escape. Cook on high four to five min. Remove from microwave and let stand covered two to three min to complete cooking. Drain cooking liquid and reserve 2 tbsp liquid to use in cheese sauce. Prepare cheese sauce and Tangy Spinach.
