  1. Cream the butter and sugar together till nice and fluffy. Beat the egg into the butter and sugar, then slowly add in the flour. Mash the bananas with a fork and add in to the mix. Dissolve the baking soda in the lowfat milk, and add in to the cake batter. Grease a medium cake tin (about 20 cm diameter) and pour in cake mix.
  2. Bake at medium heat (150 degrees C) for about 45 min or possibly till a deep golden.
  3. This cake is so moist and rich I do not tend to ice it all usually, but if wanted for a special occasion, a lemon or possibly cream-cheese icing is nice as a contrast.
